Tofu has a neutral taste which gives it the ability to absorb the flavors of surrounding ingredients. If you don’t usually choose tofu, think again and try this smooth and yummy pudding recipe. It’s It’s different, but still good and is a healthier choice when you have a desire for something sweet.

Tofu is an excellent source of protein, as well as a source for the all-important Omega-3s. Tofu also contains calcium, iron and other minerals making it a highly nutritious food.

Chocolate Pudding

1 (14 oz.) package Soft Silken Tofu
1/3 cup carab or cocoa powder
1 tsp. organic vanilla extract
1/8 cup Agave Nectar, raw honey or pure maple syrup
Stevia to taste (or more Agave Nectar) Extra delicious with Dark Chocolate or Peppermint flavored Stevia drops.

Other Additions (optional)
1 Tbsp. peanut butter
1/8 cup. Slivered almonds, walnuts, macadamia, etc.
1 small banana, sliced
Drizzle with Chocolate Delight, melted
White or chocolate, unsweetened, shaved
Mix with Chocolate Bites Delights  (before freezer step)

If the tofu seems a bit watery, squeeze it lightly in a non-terry cloth towel or several layers of paper towel. Mix all ingredients together in a food processor or a small bowl and refrigerate for 1 about an hour. You can also put this in an ice cream maker for a great chocolate sorbet!
