A simple soup that will not disappoint neither with its flavor, nor with its simplicity of preparation. Broccoli and cauliflower serve as the main ingredient which makes this  but loaded with lots of vitamins and minerals too! I chose to add tumeric because it is great for detoxing the liver and when it is combined with cauliflower, it has shown to prevent prostate cancer and stop the growth of existing prostate cancer.

Broccoli and Cauliflower Soup

1 Tbs virgin coconut oil
2 cloves garlic, chopped
1 medium onion, diced
1 lb broccoli florets
1 lb cauliflower florets
1 1/2 tsp curry powder
1/8 tsp. turmeric
1/8 tsp nutmeg
1 tsp salt
1 tsp pepper
4 cups vegetable broth
2 cups Greek yogurt

In a large soup pan, heat coconut oil over medium heat and sauté garlic and onions until translucent. Add broccoli and cauliflower florets and about 2 tablespoons of the vegetable broth to generate steam. Place lid on pan, reduce heat to medium, and steam vegetables for about 5 minutes. Add spices and remaining broth. Simmer until vegetables are very tender, about 15 minutes. For a creamy soup, place in blender and puree until smooth. Return to soup pan, over low heat, and gradually whisk the yogurt into the soup. Do not bring to a boil to prevent the yogurt from curdling. Serve warm.
