These light and fluffy waffles/pancakes are made with eggs and ricotta cheese. Eggs are an excellent source of protein. Ricotta is a soft cheese, usually made from cow’s milk. Like most cheeses, ricotta cheese is also a good source of protein, and this serving size of ricotta provides almost 15 percent of the daily protein required by a 150-lb. woman. Ricotta cheese is also an good source of calcium.
2 large eggs
¼ c. Ricotta cheese
¼ tsp cinnamon
1/8 tsp. nutmeg (optional)
½ tsp. baking powder
Stevia drops to taste (start with only a few)
Preheat waffle iron. (Can also be made into pancakes.) Beat eggs with electric mixer or whisk to make them light and fluffy. Add all other ingredients and beat until smooth. Spray waffle maker with MCT oil. Pour in batter and cook as usual for waffles.
