This is a recipe the whole family will love. It’s not something I’d suggest we eat every day, but it’s a very healthy alternative to your traditional cookie recipes or the store-bought variety. I love chocolate and mint, but you can totally omit the mint flavoring and still have a great cookie. I love to eat them right out of the freezer or crumbled in my Greek yogurt! YUM!

Mint Chocolate Chip Cookies

1/2 c butter, softened
2/3 c. Whole Cane Sugar 
1 egg
1 tsp Organic Vanilla Extract
1 1/2 tsp. peppermint extract
2 droppers Peppermint Stevia
1 1/2 c. almond flour
1/4 c. oat bran
1/4 c. carab powder
1 tsp. baking soda
1/4 tsp. sea salt
1 c. unsweetened carab chips
1/2 c. chopped walnuts

In a large bowl, cream together butter, sugar until light and fluffy. Beat in egg and stir in vanilla and peppermint extracts. In a separate bowl, mix dry ingredients. Gradually stir into creamed mixture. Sir in chocolate chips and walnuts. Drop by rounded spoonfuls on greased cookie sheets. Bake at 350 for 10-12 minute or until done. Cool cookies on cookie sheet for a few minutes then remove and cool completely Or if you are like me, eat while warm and gooey.
