ROASTED GARLIC ASPARAGUS
1 pound asparagus
2 teaspoons coconut oil, melted
1 teaspoon garlic, minced
1/2 teaspoon sea salt
1/4 teaspoon black pepper
1 lemon sliced
Snap asparagus to remove the bottom of stalks, Arrange on a cookie sheet in a single layer. In a small bowl, mix together the oil, garlic, salt, and pepper. Drizzle over the asparagus and lightly toss to coat. Add sliced lemons.
Roast at 400°F for 10-15 minutes, turning once. Don’t overcook – the asparagus should be slightly crisp.
