If you thought that healthy eating eliminates occasional treats, think again! These cookies are even more amazing than the standard peanut butter cookie recipe, and they are ooey, gooey, and chewy! Replacing white sugar with raw, organic cane sugar like we learned in this post on white sugar and omitting the refined, enriched flour (see this post on white flour) makes this recipe a much healthier option.

Be mindful, though, because although they are a healthier version, they are still a treat with sugar and calories! Be warned that they are hard to stop eating – so bake with caution! Your friends will never know there’s no flour in them.

Healthy Peanut Butter Cookies

Ingredients:
⅔ C. raw, organic cane sugar
½ tsp. baking soda
½ tsp. Himalayan Pink Salt
1 C. natural, creamy peanut butter
1 large egg

In a medium bowl, combine the sugar, baking soda, and salt with a fork. Add the peanut butter and egg, and stir until thoroughly combined. Use a tablespoon to place lumps onto the prepared baking sheets.

Bake at 350°F for 10 minutes. (The edges will start to turn brown.) DO NOT OVERBAKE!

Let the cookies cool on the baking sheet (can transfer to a cooling rack after a few minutes).
