Artichokes are naturally fat free and very low in calories. Although the petals have nutritional value, the hearts are the most nutritious part and contain numerous nutrients that deliver several health benefits. They are rich in vitamin C, potassium, folic acid and magnesium. They are also loaded with antioxidants and contain a healthy portion of our daily fiber count. One medium artichoke provides 10.3 g of fiber. The fiber and other nutrients can help clear the cholesterol from your bloodstream so it’s a healthy choice for those with high colesterol.

Artichokes contain powerful antioxidants known as flavonoids, which are essential for the protection of cells and tissues in the liver. They aid in the production of bile, which helps with digestion and the assimilation of fats.

Although you can buy canned artichokes, it’s best to buy whole artichokes in the produce section of your supermarket. Wash the artichoke well and then peel off the outer petals that are hard. As you peel off the outer petals of the artichoke, you will eventually come to the artichoke heart. The heart of the vegetable is the most favorable part and where most of the nutrients are found. You don’t have to discard the rest of the artichoke, as the entire artichoke is healthy and consumable. (I cut off the stem and discard it.)
