Tomatoes are naturally low in sodium, saturated fat, cholesterol, and calories. They have a relatively high water content, which helps fill you up! But they are more than an excellent diet food, they are  packed with nutrition! One serving (150 g) of raw tomatoes is a great source of Vitamins A, C, K,  B6, magnesium, copper, folate, potassium and thiamin.

Tomato & Avocado Salad
5 Avocados, peeled and sliced
2-3 tomatoes, sliced
2 small shallots, finely chopped
1 Tbsp. extra virgin olive oil
2 tsp. Balsamic vinegar
1 tsp. LCM Signature Blend Seasoning
Sea salt and pepper, to taste

In a small bowl, mix vinegar, oil, chopped shallots and seasoning. Place tomatoes and avocado on plates. Drizzle dressing and sprinkle with salt and pepper. Top with fresh cilantro or peppermint. Can also add fresh shrimp.
