Not only are beets a great boost to your physical well being, they are a wonderful source of iron, and very beneficial in preventing diseases. Beets are also a great food to consume when detoxing. Beets are high in carbohydrates which means they are a great instant energy source which is great for a hot summer day that drains you.

Beet Summer Salad

1 1/2 pounds beets, peeled and diced
1- 1/2 c. spinach
1/2 c. fresh basil, chopped
2 cloves garlic, minced

Dressing:
3 Tbsp. extra virgin olive oil
2 tsp. apple cider vinegar

Steam beets for about 5 minutes, or until they become tender. Remove from stove and immediately plunge them into a bowl of ice water, allowing them to chill until completely cool. Drain and let dry or spin them in a salad spinner.  Combine the beets with spinach, chopped basil, minced garlic. Add dressing and serve cold.
