Blueberry Energy Balls
10 pitted Medjool dates
1/3 cup frozen organic blueberries, slightly thawed
1 teaspoon organic vanilla extract
1/2 cup raw almonds
1 tablespoon almond butter
1 serving organic, (preferably plant based) protein powder with optional green superfoods
Shredded unsweetened coconut

Soak dates in hot water for about 10 minutes (remove pits if necessary). Process the nuts in a food processor or blender until finely chopped (almost a flour). Add dates, vanilla, and almond butter, blueberries, protein powder and process until smooth.

Scoop into balls using a cookie scoop onto a baking sheet lined with parchment paper or a silicone mat. Freeze for an hour to harden then remove from freezer and roll in the shredded coconut. Store in a sealed container in the fridge.
