Chicken Fajitas

1 1/2 pounds boneless, skinless chicken breasts
1 Tbsp. virgin coconut oil
1 Tbsp. MCT oil  or olive oil
3 Tbsp. fresh lime juice
1 cup cilantro, chopped
1 green bell pepper, sliced into strips
1 red bell pepper,  sliced into strips
1 onion, sliced into strips
2 Tbsp. Three Amigos Mexican Seasoning

In a blender or magic bullet combine MCT oil, lime juice, garlic, cilantro and 1 tablespoon of the seasoning. Blend until smooth. Place chicken pieces in a marinating container or Ziplock bag and pour the liquid over chicken. Let marinate for about an hour. (Longer is even better)

Heat chicken broth and coconut in skillet over medium heat. Add onions and peppers and saute until desired tenderness. Remove from skillet and set aside. Remove chicken from marinade, place in heated skillet and sprinkle with remaining Mexican Seasoning. Cook until no longer pink, about 7-10 minutes. Add the onions and peppers back in if desired and serve with warm tortillas.
