Everyone loves a crunch to their salads, but to be healthy we need to stay away from the coutons! This salad gives you a great alternative using Ezekiel pitas. It’s a great flavor with a Greek twist. Top with a simple dressing (below) or for a creamy dressing add in some Greek yogurt.

Crisp Pita Salad

Romaine lettuce, chopped
Spinach, chopped
Cucumbers
Cherry tomatoes, halved
2 Eggs, hard boiled and sliced
Onion or scallions, sliced

Pita Crisps:
1 Ezekiel Pita
1 Tbs. MCT oil (or Extra Virgin Olive Oil)
2 Tbs. toasted sesame seeds
1 tsp. grated lemon zest
1/2 tsp. dried thyme
1/8 tsp. salt
1/8 tsp. pepper

Dressing:
1/4 MCT oil or Extra Virgin Olive Oil
3 Tbsp. fresh lemon juice
1 Garlic Clove

To make Pita Crisps, split and tear the pita into bite-size pieces. On a rimmed baking sheet, toss pita pieces with oil and seasonings. Bake at 350 until chips are golden brown, about 12 to 15 minutes. Mix dressing and toss to combine with salad, and remaining ingredients. Toss pita crisps into or over top of salad.
