Here’s a great soup loaded with beneficial vegetables – perfect for every healthy diet. I added curry to a typical broccoli and cauliflower soup recipe which gives it an unique flavor and is great for detoxing the liver. I used coconut milk to add a healthy fat and make it extra creamy. Without adequate amounts of dietary fat, your body can become deficient in many important vitamins and minerals as they are not absorbed into your system. Without fats, the important nutrients in your other foods will not be absorbed and will be lost. It’s why I am not a fan of low fat diets. Curry Cauliflower & Broccoli Soup
1/2 head cauliflower, cut into florets
1/2 head broccoli, cut into florets
1 Tbsp. MCT or extra virgin olive oil
1 Tbsp. butter
1 onion, chopped
1-2 garlic cloves, minced
4 c. water
2 c. chicken broth
1/4 c. parsley, chopped
1/4 tsp. thyme
1/2 tsp. oregano
1/2 tsp. curry
Sea salt and pepper to taste
1 c. coconut milk
1/4 c. Nutritional Yeast

Preheat oven to 450 degrees. Toss cauliflower and broccoli on baking sheet with the oil, salt, pepper and garlic. Roast approx 25 minutes or until spotted with brown. Melt butter in soup-sized pan over medium-high heat. Saute onions until soft and slightly translucent. Add cauliflower, broccoli, water, broth, seasonings and bring to boil. Reduce heat and simmer for 10 minutes. Puree large pieces of soup and return to pan. Add coconut milk and nutritional yeast. Sprinkle with additional spices as needed.
