Dairy-Free Creamy Cauliflower Alfredo Sauce

6 cups fresh cauliflower florets
2 cups vegetable broth
5-6 cups water, divided (see instructions)
8 garlic cloves, minced
2 tablespoons coconut oil
1/2 cup dairy-free milk
3/4 cup grated parmesan cheese
salt, to taste
pepper, to taste

Pour the vegetable broth and 4 cups of water into a stock pot. Add cauliflower and bring to a boil. Boil until cauliflower becomes tender.

Saute garlic in oil over medium heat until the garlic is soft and fragrant.

Cook pasta and reserved pasta water.

With a slotted spoon, transfer the cauliflower to a food processor. Add garlic, milk, parmesan, salt, pepper, and 1 cup of water and puree. Adjust with water until you get the desired thickness.
