Congratulations to our Day 7 winner: Sonja Marich

It is almost time to celebrate Christmas!! Are you ready? Tonight in my neighborhood they are going caroling. Such a great old tradition that helps shape communities and build relationships and memories. And that is what the season is for. To give, share, and love on our families.

Contest: Do you Christmas Carol? What is your favorite Christmas song?

Prize: Two free movie passes at the theatre of your choice.

Macaroon Cookies
4 egg whites
1/2 tsp. cream of tartar
1/2 cup of organic whole cane sugar
1/2 tsp. cinnamon
1/4 tsp. pure stevia powder
1/4 tsp. nutmeg
1/4 tsp. cloves
Dash of salt
2 cups unsweetened coconut flakes

Separate eggs and allow egg whites to come to room temperature (sit the counter for 1-2 hours). In a medium-sized bowl beat the egg whites with a hand beater until they are frothy. Add the cream of tartar and beat until the egg whites are stiff and keep their shape when you pull the beaters out of the bowl. Fold in the sugar, stevia, salt, and spices. Then gently stir in the coconut flakes. Drop by teaspoon onto lined or greased baking sheets. Bake at 350 for about 20-25 minutes, or until the cookies are lightly browned and set. Allow to cool and enjoy!

It may not be Christmas songs I sing, but I have definitely made some new holidays traditions with my 2 year old daughter. We celebrate Hannukah in our house and so we have a few favorites but at the moment the favorite one is
“Hanukkah, Oh Hannukah”. We decorated our house with dreidels and menorah’s and make some delicious holiday treats such as Latkes (potatoe pancake) and Sufganiot (doughnuts). The best part is being able to share our homes with our family and friends. Eight nights of lighting candles and celebrations. Happy Holidays to everyone!
