This pizza crust recipe is delicious gluten-free, low-carb, and keto-friendly. It’s a simple blend of cauliflower rice, eggs, cheese, and a few spices that are baked into a golden delicious crust. 

The best thing about making your own pizza is that you can put any topping you want, and satisfy your cravings while sticking to your healthy diet.

Easiest Cauliflower Pizza Crust

  • 1 tablespoon extra virgin olive oil
  • 1 (16-ounce) bag cauliflower rice
  • 2 large eggs, lightly beaten
  • 1 (8-ounce) bag low-moisture shredded mozzarella cheese (2 cups), divided
  • 1 teaspoon salt-free Italian seasoning
  • 1 teaspoon garlic powder
  • 1 teaspoon kosher salt
  • 1 teaspoon ground black pepper

Combine the cauliflower, eggs, and half mozzarella cheese (1 cup) in a saucepan over low heat until the cheese is melted and the mixture clumps together when stirred. (can also use a microwave.)

Stir in the Italian seasoning, garlic powder, salt, and black pepper.

Place the dough on a baking sheet lined with parchment paper and use your hands to shape it into a large, thin circle (the thinner it is, the crispier it will become).

Bake 20 minutes at 450 on the lower oven rack or until the bottom of the crust is golden and a little crispy. The amount of time you bake it will depend on how crispy you like your crust.

Add a layer of cheese (starting with cheese prevents a soggy crust). Top with a little sauce (white and red sauce recipes below), then cheese and toppings of choice. There are a number of cheeses and toppings so experiment and enjoy!

Return to the oven and bake another 10-15 minutes or until crust is done and cheese is melted. For extra browned cheese, broil for 2-3 minutes.
