Easy Fajita Chicken Bake

Cinco de Mayo (Fifth of May) commemorates Mexico’s victory over the French army at the Battle of Puebla in 1862. Celebrate this occasion with a scrumptious Fajita recipe. Easy Fajita Chicken Bake
3-4 boneless skinless chicken breasts, cut into strips
2-3 tsp Three Amigos Seasoning
2 bell peppers in assorted colors, deseeded and thinly sliced
1 red onion, thinly sliced
1-2 Tbsp olive oil

Lay the chicken in a single layer in a glass baking dish or on a cooking tray. Sprinkle the taco seasoning over the top. Lay your thinly sliced onions and peppers on top of the chicken, spread out evenly over the top. Drizzle the olive oil over the peppers and onions.

Bake at 375 for 35-45 minutes or until chicken is cooked through and the juices run clear.
