Cranberries do more than help treat urinary tract infection. These acidic berries are not only heart-healthy, they are rich in Vitamin C and believed to have excellent infection-fighting properties. Eat them fresh, juice them or bake with them! Here is a great recipe for flourless muffins.

Flourless Cranberry Walnut Muffins
3 eggs
2 Tbsp. virgin coconut oil
2 Tbsp. coconut milk
1/2 tsp. liquid stevia
1/4 tsp. sea salt
1/2 tsp. cinnamon
1/4 tsp. vanilla
2 Tbsp. oat bran
2 Tbsp. ground flaxseed (flaxmeal)
1/4 tsp. baking powder
2 Tbsp. apple sauce (no sugar added)
1 tsp. raw honey
1/3 cup walnuts, chopped
1/4 c. dried, unsweetened cranberries

Blend wet ingredients together – eggs, coconut milk, coconut oil, salt, vanilla and stevia. Combine dry ingredients and blend into wet ingredients. Add in apples, raisins and walnuts and mix well. Place in a muffin pan lined with muffin papers. Bake at 375 for about 15 minutes.

      Dr. Simeons states no sugar, no starches until stabilized. Even though honey is a natural sugar, it should still be used for life-long healthy eating.
