Flaxseeds are a rich source of Omega-3s, fiber and contain minerals such as manganese, copper, and magnesium and vitamins such as folate and vitamin B6. In addition, they contain lignan phytonutrients, which have been found to have hormone-balancing and cardiovascular benefits. You cannot get all of those unique flaxseed benefits unless you mill or grind the seeds. This recipe is a great way to get in the wonderful benefits of flaxseeds and start your day off right with fiber and protein.

Flourless Flaxseed Pancakes 

2 eggs
MCT oil
2 Tbsp water
2 Tbsp. ground flaxseeds (flaxmeal)
1 Tbsp. protein powder
1/2 tsp. baking powder
1 tsp stevia or a few drops of liquid stevia (vanilla flavor is good)
¼ tsp cinnamon

Preheat a frying pan, and add MCT oil just before use. (don’t heat the oil, just the pan to save the miraculous benefits the oil has). Beat egg and water together until light and fluffy. Add flaxseeds, stevia and cinnamon. Pour about half batter in preheated pan. Turn when bubbles appear on top of pancake, then cook for just a minute more. Sprinkle with topping of choice (cinnamon, pure maple syrup, raw honey, etc.) and serve.

      I am sorry, but I just don’t have time to do all the nutritional facts on all my recipes. Maybe one day, but for now, this is just a hobby for me in my spare time!     I’m definitely trying this. I feel dumb even asking this question – can you have flaxseed flour or coconut flour on p2? I know they aren’t on the original protocol, but neither is coconut oil and it has been a wonderful addition to my p2 life!
