These light and fluffy waffles are made with eggs and ricotta cheese. Eggs are an excellent source of protein and it is a wise choice to have 2 per day. Ricotta is a soft cheese, usually made from cow’s milk. Like most cheeses, ricotta cheese is a good source of protein and this serving of ricotta provides almost 15 percent of the daily protein required by a 150-lb. woman. Ricotta cheese is also an good source of calcium.

Guilt-free Waffles

2 large eggs
¼ c. Ricotta cheese
¼ tsp cinnamon
1/8 tsp. nutmeg (optional)
½ tsp. baking powder
1-2 packages Stevia

Preheat waffle iron. (Can also be made into pancakes.) Beat eggs with electric mixer or whisk to make them light and fluffy. Add all other ingredients and beat until smooth. Spray waffle maker with MCT oil. Pour in batter and cook as usual for waffles.

Strawberries
Real whip cream
Butter
Maple Syrup

    Looking forward to trying this recipe after my next shopping day!  It says 2 waffles are good, but I was wondering if the recipe makes 2 waffles because I’ll be cooking for three of us.  Thanks!
