There’s a local restaurant we often visit for their happy hour meatballs. Although it’s not a fancy meal, it is absolutely delicious and filling! So, I set out to duplicate their tender and moist meatballs.

While the restaurant uses beef, I wanted too make mine with ground turkey. I’ve also used a mixture of turkey and grass-fed beef.

Healthy Baked Skillet Meatballs

  • 1 lb ground turkey or beef (or a combination of both)
  • 1/2 medium onion, chopped fine
  • 1 egg
  • 1/4 cup Parmesan cheese, grated
  • 3 garlic cloves, chopped
  • 1/4 cup Italian parsley (divided)
  • 2 tsp powdered garlic
  • 1/2 tsp. oregano
  • 3/4 tsp. Himalayan pink salt

In a medium bowl, mix together all ingredients, leaving aside some of the parsley for topping. Mix well and form small balls. Place meatballs in a cast-iron skillet (or another baking dish). Add some Homemade Marinara Sauce and sprinkle with the remaining parsley. (Can also add more grated Parmesan cheese)

Bake at 375 for about 20 minutes. Depending on your cooking dish, it may take a little longer. Cast iron skillets cook differently so you will need to check to make sure your meat is fully cooked if using a different method.

Although I eat my meatballs as is on this recipe, you can also serve over quinoa, rice or pasta.
