If you are having a craving for chocolate chip cookies, then this is the recipe for you! It’s a much healthier version than your typical cookie recipe. Hazelnuts contain vitamins, minerals, protein, fiber and healthy fats. Hazelnuts are one of those sweet-flavored nuts that are delicious as a snack, on salads and, of course, in baked recipes! They add a nutty and rich flavor to any favorite recipe.

 

Hazelnut Cookies

2 c. hazelnuts – shelled and ground up in nut grinder
1/2 c. coconut flour
1/2 c. unsweetened coconut flakes
1 tsp. baking powder
1/4 c. raw honey
3-4 oz.  dark chocolate or 1 cacao chocolate bar, cut into chunks
1/4 c. unsweetened applesauce
2 organic eggs

Preheat oven to 350 degrees. Place coconut on a cookie sheet and bake them until lightly toasted, about 3-5 minutes. Let cool and blend with remaining ingredients until well mixed. Roll into small balls and place on a parchment-lined cookie sheet. Flatten with fingers or spatula.

Cook for approximately 10-12 minutes. Cool for about 30 minutes.
