Along with chocolate and cheesecake, popcorn is on my list of favorite foods. For years I loved to walk in a movie theater and smell the buttery goodness. That is until I learned how terribly unhealthy it is for our bodies with all those trans-fats and fake butter. I haven’t had movie popcorn since, but I have made my healthy popcorn over and over and enjoy it guilt-free! It’s a healthy grain and the carbohydrates in popcorn help in the production of serotonin in your brain!

Healthy Popcorn

1/2-cup organic popcorn kernels
3 Tbsp. Extra Virgin Coconut Oil  (I only suggest using coconut oil – or palm, but that is not my favorite. No other oils should be used!)
Dash of sea salt or Himalayan pink salt
Organic butter (do not use margarine, etc. Butter is a healthy fat)

Cover the bottom of a whirly popcorn pan with coconut oil. Place on the stovetop over medium heat until the oil has melted. Add the popcorn and let it heat up for a few minutes, stirring occasionally with the “magic wand”. Make sure and not have the heat on your stove too high as it will destroy all the healthy benefits that coconut oil has to offer.

When the popping starts to taper off, take the pan off of the heat. Transfer the popcorn to a large bowl or paper grocery bag and season with melted butter and sprinkle sea salt. To add some omega-3’s in drizzle with flax seed oil and sprinkle with flaxseeds.

Note: you can make this in an air popper, but you won’t get as many benefits as you do by consuming coconut oil. If you want to use an electric style popcorn popper, use one designed for oil.
