One of my favorite go to snacks, hands down, is my husband’s homemade beef jerky. This is something he created in our kitchen many years ago and it has been a hit with my family, friends, and really anyone who tries it. I am not a fan of the prepackaged beef jerky that you find in grocery stores and in gas stations. They have so many added ingredients and preservatives that it just doesn’t taste like it’s any good for you and honestly just doesn’t even taste good! This homemade jerky is a great way to get some extra protein in if you are on the go. It does have a little kick to it but, it is so good and addictive after you eat that first piece that you will want more. I hope you enjoy it as much as our family and friends have!

Dylan’s Beef Jerky

1 Cup White vinegar
14 T Worcestershire sauce
4 T Hickory or Mesquite liquid smoke (whichever you prefer)
1 tsp Salt
1 tsp Old Bay
¼ tsp Cayenne pepper
1 tsp Crushed red pepper flakes
½ tsp Garlic powder
1 tsp Season salt
½ tsp Chili powder

Mix all ingredients together in a large bowl and set aside. Take your 2 lbs of either Eye of round or London broil and slice just under ⅛ of an inch thick (you can even have your butcher do this for you as it will save a lot of time).  Next let the meat marinate for at least 3 hours but remember, as with most meats, the longer you let it sit the better it will be. When you are ready to start dehydrating, lay it flat on your trays and let it dehydrate for a few hrs then reapply the marinade to the meat. Continue with the dehydrating and do the step above as many times as you wish.  Set dehydrator to 155 degrees for approximately 8 hours. The more flavor you add the better it will be.
