I try to come up with new things for the slow cooker.  I can throw it all together and for this busy mom it helps to have easy recipes that turn out at dinner time.  I do not follow recipes well and typically just start throwing things in and praying it turns out.  This one was a hit.  Hope you enjoy it.

Slow Cook Crockpot recipe

4-5 Chicken Thighs
5 Tomatoes or canned tomatoes chopped drained
1-1/2 Onion Diced
1 Bell Pepper
1/4 cup Apple Cider Vinegar
Himalayan Sea Salt
Jalapeno or green chilies peppers if desired
1T Signature Blend
1T Crushed Pepper
1 Small Can tomato paste
1/2 Cup of diced carrots
2 cups Celery
4 garlic cloves minced
3/4 cup of red table wine(optional)
1T oregano (optional)

Wash the chicken and rub and sprinkle on the salt, pepper and Italian seasoning, try our Signature Blend.  Add all the other ingredients to the crockpot and combine.  Lay the chicken on top and secure.  About two hours in open lid and move the chicken down into the sauce.  You will want to cook on low for 4-6 hours.  I waited until the chicken was starting to separate from the bone.  The fluids from the veggies will create a great sauce for the chicken to marinate in while it cooks and provides a great sauce for the topping.

Combine with Quinoa pasta noodles and use the sauce to cover the pasta.  Excellent easy to make recipe.
