Macadamias a good source of protein, calcium, potassium and dietary fiber and are very low in sodium. They are also a great energy food! Many studies have shown that daily consumption of macadamia nuts helps lower cholesterol. Not only do they taste good they are good for you! I’ve added them to a family favorite recipe in order to receive the many benefits that macadamias have to offer!

Italian Meatballs with Roasted Red Pepper & Macadamia Sauce
1 lb. ground turkey
2 garlic cloves, crushed
¼ c. onion, chopped fine
1 tsp. dried Oregano
1 tsp. dried basil
1 tsp. parsley
½ tsp. pepper
½ tsp. sea salt
¾ c. oat bran

Sauce:
4-5 pieces of roasted red pepper
3 garlic cloves
1 ½ c. macadamia nuts
½ c. extra virgin olive oil
½ c. coconut milk
3 large basil leaves
sea salt and pepper

For meatballs: Preheat skillet to medium heat and add coconut oil and allow to melt. Mix together and form 1” balls. Add meatballs in heated skillet with coconut oil until done, approx 25 minutes, turning when needed.

For sauce: Combine ingredients in a processor and blend together until creamy. Can and add water if needed. Add to meatballs and simmer for 15-20 minutes. Sprinkle over crushed parsley or basil and serve. Great over brown rice or farro.
