These cookies are low-carb, Keto-friendly and delicious!

Keto Lemon Cookies

1.5 C coconut flour
.5 C almond flour
2 tsp cream of tartar
1 tsp baking soda
.5 tsp xantham gum
1/8 tsp salt
1 stick of butter
.75 C granulated monk fruit sweetener
2 eggs
1 TBSP lemon zest
1 TBSP lemon juice
1 tsp lemon extract (1/4 tsp almond extract optional)
1/2 C nuts (Almond slivers, Mac nuts chopped), optional

Frosting:
Brick of cream cheese
Juice of 1 lemon
1/2 tsp lemon extract
Pinch of salt
1 C powdered monk fruit (add more to taste)

Preheat oven to 350.

Cream butter and sugar. Then add eggs, mix until combined. Then add zest extract and juice. Whisk all the dry ingredients together then add to wet ingredients mix just until combined. Fold in nuts if wanted.

Bake for 12 to 14 minutes. Cool completely then add frosting.

For frosting make sure cream cheese is softened add all ingredients to the bowl, whip on high until light and fluffy.
