Broccoli, cauliflower, cabbage and other coniferous vegetables may help protect against some types of cancer. Leafy greens such as spinach and broccoli are excellent sources of folate, a B vitamin that helps reduce risk of birth defects. You can use fresh or frozen broccoli for this recipe, although I prefer fresh.

Loaded Broccoli

4 cups of broccoli, fresh or frozen
8 Tbsp butter
8 Tbsp sour cream
4 slices crumbled bacon
1 cup shredded cheddar cheese
2 Tbsp fresh chives

Place broccoli in a 9 x 13 pan and top with butter, sour cream, bacon bits, cheese and chives. Bake at 350 until broccoli is cooked to desired tenderness.
