Here are some yummy Breakfast ideas and recipes to keep you and your family healthy and happy!

Who doesn’t love Pizza?  Try this Breakfast Pizza with the kids.

Breakfast Pizza
1 egg
2 egg whites
Splash of water
veggies for topping, chopped up & saute if desired (green peppers, red peppers, mushrooms, tomatoes, etc.)
shredded cheese
Salt and pepper to taste

Whisk together egg, egg whites, and milk and finish with a pinch of salt and pepper. Heat an eight-inch non-stick sauté pan over medium low heat. Add eggs to the pan and allow to cook for about two to three minutes.  You’re basically looking for the eggs to set all around with a little wiggle on the top! (The key to perfect eggs is to cook them LOW and SLOW!) Once you’re eggs are mostly set with a little wiggle on top sprinkle the veggies and cheese over the top.  Pop a lid on and allow to cook another two minutes or so or until the eggs are completely set through and the cheese has melted. Slide on to your plate and enjoy!!

Waffles more the flavor of the day!  Here is a healthy recipe we all can enjoy!

Guilt-free Waffles

2 large eggs
¼ C Ricotta cheese
¼ tsp cinnamon
1/8 tsp. Nutmeg (optional)
½ tsp. Baking powder
1-2 packages Stevia
Preheat waffle iron. (Can also be made into pancakes.) Beat eggs with electric mixer or whisk to make them light and fluffy. Add all other ingredients and beat until smooth. Spray waffle maker with MCT oil or other cooking spray. Pour in batter and cook as usual for waffles.

Topping suggestions:
Butter
Maple Syrup
Strawberries & real whip cream

    The waffle did not work for me.  It stuck horribly to my non-stick waffle iron and split in half — part stuck to the top and part stuck to the bottom.  I’m trying to soak my waffle iron by closing it on a wet towel and see if I can clean up the mess.

    I did have enough batter to try making a pancake in a non-stick skillet, and that worked beautifully, but I would not try making a waffle with this batter again.
