It is a common myth out there that says that dehydrated fruits contain more sugar. That the water evaporates and the sugar levels increase per apple. This is not true. Dehydrating foods keeps them raw with all nutrients and enzymes intact. It is an excellent way to preserve fruits, vegetables and meats. Dehydrated fruits do not contain more sugar. A dehydrated apple still contains the same amount of sugar as a whole apple, only now the apple has no water in it. However, people have a tendency to eat larger amounts of dehydrated fruits so their intake of fructose is higher.

Most people don’t eat 5 whole apples at a time, but they do have a tendency to eat enough dehydrated apples that would be equal to 5 apples. which means they would be getting the amount of sugar in 5 apples all at once.
