Have a craving for pizza on a hot summer day? This pizza is just bursting with summer flavors! It’s loaded with healthy items such as basil, pine nuts, spinach, tomatoes, and just about anything else you might want to add on! It’s a perfect recipe with healthy foods straight from your summer garden. I usually make this pizza when I am entertaining my girlfriends … it goes great with a glass of red wine, it’s healthy and a little bit froofy for girl time!
Pesto Pizza
Pesto:
3 cloves garlic
2 cups fresh basil leaves
3 tablespoons pine nuts (pignolia)
1 dash salt and pepper
1/2 cup extra virgin olive oil
1/2 cup Parmesan cheese grated

Pre-made pizza dough or your favorite recipe.

Topping Ideas:
Grilled chicken
Peppers
Red onion
Spinach
Fresh mozzarella cheese
Feta cheese
Olives
Artichoke hearts
Basil leaves
Preheat the oven to 450 degrees. Spread pesto sauce over the pizza crust. Arrange chicken pieces and other toppings over the sauce, and sprinkle with cheese. Bake for 8 to 10 minutes in the preheated oven, until cheese is melted and lightly browned at the edges.
