Chia seeds have become known as a “super seed” because of their many nutritional benefits. Just one ounce of chia seeds per day can provide you with a healthy dose of omega-3 fatty acids, vitamins, calcium, and other minerals, along with fiber, and antioxidants. Chia seeds are also a complete protein source.

Because of the gelling action of the fiber in chia seeds, they keep you feeling full for longer periods of time. This means you won’t be tempted to eat between meals, so they’re a great partner for those trying to lose weight.

Pumpkin Chia Pudding
1/4 C. chia seeds
1 C. unsweetened vanilla almond milk
1 tsp. vanilla extract
8-10 drops vanilla stevia
8-10 drops pumpkin spice stevia
1/4 C. pumpkin puree
1/2 tsp. cinnamon
pinch Himalayan Pink Salt
Pecans for garnish

Mix chia seeds and almond milk together and let sit in the fridge for at least an hour. Add remaining ingredients and mix in a blender or bullet until smooth and creamy.

Garnish with pecans, and/or cinnamon and/or pumpkin spice, if desired.
