This is an easy casserole to make in an hour or less and will please even the kids. 

2lb Hamburger- Lean
1/4 cup onion
Italian Seasoning to taste
1 Box of Quinoa Macaroni Pasta
2 cups of Cheddar
2 cups of Mozzarella
1-2 Zucchini sliced
1 Jar of your favorite spaghetti sauce

Preheat oven to 350 degrees.  Brown hamburger with seasoning and onions.   While you are cooking the meat bring 4 quarts of water to a boil and boil Quinoa for 9 mins, drain and set aside.  After meat is done, add in spaghetti sauce and turn to simmer.  Slice zucchini.  Layer the lasagna dish with zucchini, then meat, then noodles then cheese.  Repeat until you have topped with cheese.  You could add any veggies you wish.  This is a flexible dish that can become a family favorite.  It is similar to lasagna but it is gluten free and much better for you.  Cover with aluminum foil and bake for 35-45 mins.
