Roasted Garlic Purple Mashed Potatoes 
2 lbs purple potatoes, well washed and peeled
4 cloves garlic, peeled and crushed
1 teaspoon sea salt
Ground black pepper
4 tablespoons butter (or olive oil)
¾ cup whole organic milk (or your choice of milk)

Preheat oven to 425°F, place a rack in the middle. Place potatoes in a large pot and cover with cold water. Add sea salt and bring to a boil. Cook until tender, about 12 to 15 minutes. Remove from heat and drain. Return pot to the stove and over low heat, heat the milk and butter until butter melts. Add garlic and potatoes, and mash until smooth and creamy. Taste and season with salt, pepper and Garlic Bliss. Serve immediately.
