Cabbage is not only a very healthy liver-cleansing vegetable, cabbage takes longer to digest and keep your fuller longer. Cabbage contains lecithin which is important in cleaning the liver (our best detoxing and fat burning organ!) and it intervenes with the body’s ability to form fat deposits. Cucumbers contain a high concentration of caffeic and ascorbic acids. These agents fasten the overall metabolism and prevent water retention. They are enriched with nutrients like folic acid, vitamins A and C. The skin of cucumber is a good source of molybdenum, magnesium, silica and potassium apart from trace minerals like silica so try and leave the skins on!

Sassy Crunchy Salad
1 cabbage, chopped
1/2 onion, chopped
1 medium – large cucumber, chopped
1/2 red pepper, chopped
1/4 – 1/2 c. corn
2 Tbsp. toasted sesame seeds
6 – 8 Tbsp. Vinaigrette Dressing (made according to package directions)

Mix all ingredients together. Mix with dressing according to your taste. The more you use, the sassier it is!!
