Eggnog is a delicious holiday treat, but the eggnog you buy in the stores is so full of processed sugar, pasteurized ingredients, and other additives which makes it incredibly unhealthy. This version, although not labeled as a health food, contains a lot less fat and sugar than the processed varieties without sacrificing the taste.

This is as fresh and homemade as it gets!

Spiced Eggnog

2 cups almond milk (options: unsweetened coconut, or rice milk)
3 large egg whites
1/4 cup pure honey
1 tsp. pure vanilla extract
1/2 tsp. ground nutmeg
1/2 tsp. ground cinnamon + extra to sprinkle on top
10-15 drops of Eggnog Stevia, to taste

Place all ingredients in a blender and blend for about 2-3 minutes. Pour the eggnog into a medium saucepan over medium-low heat for 15 minutes to cook the egg. You want the mixture to get hot, but not to boil. Whisk often to avoid boiling. Remove from heat and set the pot in the fridge when it’s cooled enough to do so. Chill overnight.

Pour into mugs and adjust with milk if too thick. Sprinkle with cinnamon, add cinnamon sticks, if desired, and serve. For those special occasions, add in Amaretto Liqueur.
