The flesh of cucumbers is a very good source of vitamins A, C, and folic acid. The hard skin is rich in fiber and a variety of minerals including  magnesium, silica, molybdenum, and potassium. I also like to toss broccoli spouts over my salads (or add to shakes!) because topping a salad  wtih broccoli sprouts may provide you with many of it’s cancer-protective benefits.

Strawberry Cucumber Salad 

1 whole cucumber, peeled if desired
Sliced strawberries
1/4 c. red onion, chopped
Arugala or green salad
Broccoli sprouts

Strawberry Vinaigrette
1 tablespoon apple cider vinegar
1 tablespoon lemon juice
Stevia to taste
Dash of salt
Dash of cayenne (optional)
Fresh ground black pepper to taste
Stevia to taste

Slice strawberries and cucumber and toss with salad. Combine all Vinaigrette dressing ingredients together and puree in food processor.
