Summer Salad

Greens, Spinach or lettuce (or a mix of both)
Strawberries, washed and sliced
Red Onions, sliced thin
Nuts (walnut, pecans, or almonds, chopped or sliced
Gorgonzola,  blue cheese, Feta or goat cheese, crumbled

Dressing:
1/2 cup olive oil
1/3 cup red wine vinegar
1 tablespoon poppyseeds
2 cloves garlic, minced
1/2 teaspoon dry mustard
2-3 tablespoons honey, to taste
1/2 teaspoon salt

Place greens in the bottom of a serving bowl or distribute among individual plates. Top with strawberries, nuts, and cheese, to taste. Whisk all the dressing ingredients together and mix. Toss with dressing just before serving.
