This recipe is a nice light and fresh salad perfect for those hot summer days. I used Just Like Sugar which I highly recommend if you are trying to remove sugar from your diet. Summer Spinach Salad

1 package (9 ounces) fresh spinach, torn
1 c. sliced fresh strawberries
1 large banana, sliced
1 medium ripe avocado, peeled and sliced
2 green onions, thinly sliced

Dressing:
1/2 c. Just Like Sugar
1/3 c. mixture of Red Wine Vinegar & White Vinegar
1/3 c. olive oil
1 Tbsp. grated onion
1 tsp. ground mustard
1 c. fresh or frozen strawberries, sliced
1 tsp. poppy seeds

In a salad bowl mix the salad ingredients. For the dressing, mix the first five ingredients until the sugar is dissolved. Stir in thawed strawberries and poppy seeds. Drizzle over salad and mix in.
