Looking for a great health appetizer? This one is great to serve and take along to a party. It’s a healthy choice and very delicious so you won’t be tempted by those unhealthy foods that always seem to show up at gatherings.
Tomato Slices with basil & Cheese
4 lg. ripe Roma tomatoes, stems
removed, sliced 1/2 inch thick
1 sweet red onion, sliced paper thin
Salt and freshly ground pepper
3-4 fresh garlic cloves, minced (optional)
2 tsp. fresh minced basil
Extra Virgin Olive Oil, Peanut oil or MCT oil
Red wine vinegar
Feta Cheese

Place layer of tomato slices on a platter and top with onion. Season with salt and pepper, garlic and basil. Mix oil and vinegar together and sprinkle over the tomatoes and onions. Continue layering ingredients until all are used. Top with cheese. Refrigerate until well chilled.

    The recipe is called tomato slices with basil and cheese except I didn’t see cheese anywhere in the recipe.
