Today is Chocolate Pudding Day! So, mix up a healthy pudding and enjoy it on a nice hot summer afternoon! Avocados are a great healthy fat which makes this a great recipe to have any day! It may sound weird, but it’s actually very tasty! Comment below and let me know what you think!

Avocado Chocolate Pudding
2 medium avocados, very ripe and soft
1/2 c. coconut milk
1/2 c. Greek yogurt
3 Tbsp. organic coconut oil, melted
1/3- 1/2 c. unsweetened cocoa or carab powder
3 Tbsp. raw organic honey
8-10 drops liquid stevia
2 tsp. organic vanilla extract

Spoon out avocados and put in food processor along with remaining ingredients. Process until ingredients are well combined and smooth. Cover and refrigerate until cool. Mix with whole whipping cream or top with chocolate pieces, if desired.

    I did not think I would like this…but I had all the stuff handy so I whipped it up this morning. Let it chill all day and WOW what a great treat tonight~ I used unsweetened cocoa and an organic orange honey and did everything else per directions and it was tasty! I topped with a few raw nuts. Loved it and will be making it for my family this weekend.
