Bell Pepper Tacos
- 4 red bell peppers
- 3/4 cup shredded cheese
- 1 lb lean ground beef or turkey
- 1/2 onion, minced
- 1 Tbsp olive oil or oil of choice
- 2 Tbsp of Little Choices Matter Three Amigos seasoning
- 1 cup water
Pre-heat oven to 400F.
Slice each bell pepper in half and remove the stem and seeds. Place peppers on sheet pan and bake for 10-12 minutes.
Brown onion in 1 Tbsp oil in a large heavy-duty pan. When the onion starts to brown, add the ground meat. Crumble and stir meat until brown. Add seasoning and stir for 2 minutes.
Next, add 1 cup of water and simmer for 2-3 minutes. Remove from heat. Fill each bell pepper and top with cheese and return to oven to bake for 20 minutes.
Optional toppings can be added such as chopped lettuce, tomatoes, salsa, avocados, red pepper flakes and plain greek yogurt.
