Cinnamon Applesauce Muffins

3/4 cup coconut flour (no more. no less.)
6 eggs
3/4 cup pure maple syrup
1/2 cup unsweetened applesauce
1 cup grated apple or diced into cubes
1 teaspoon baking soda
1 teaspoon ground Ceylon cinnamon

Optional Topping:
1/2 teaspoon ground Ceylon cinnamon
1 tablespoon turbinado sugar (also called raw sugar), for sprinkling on top.

In a large mixing bowl, combine all of the ingredients blending well until you have a thick and uniform batter.

Pour batter into 12 muffin cups and sprinkle with topping if desired. Bake at 350F for 25 to 30 minutes, or until the edges are lightly golden and the centers are firm. Allow to cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.
