While this may seem like a traditional recipe, we made some healthy changes to the well-known summer salad. It’s is filled with fresh and healthy ingredients. So tasty, this salad will be a hit at your next picnic or BBQ. 

We added black grapes and cranberries for extra antioxidants and nutritional benefits. (these are optional if you are on Keto and don’t want added carbs from fruit)

We used a healthy mayo such as Chosen or Sir Kinsington’s and mixed it with a healthy yogurt making it extra creamy!

Creamy Summer Broccoli Salad

• 8 cups broccoli cut into bite-sized pieces
• 1/3 cup red onion, diced
• 1/2 cup grapes, cut in half
• 1/4 cup almonds, sliced
• 1/4 cup cranberries
• 1/2 cup bacon bits (uncured, no nitrates and nitrites and reduced-sodium)

Dressing
• 3 tablespoons vinegar (Apple cider or white)
• 2 tablespoons sugar (coconut, monk fruit, etc.)
• 1/2 cup mayonnaise
• 1/2 cup yogurt
• 1/4 – 1/2 tsp salt and pepper (+/- to taste)

In a mixing bowl, whisk together the dressing ingredients. Set aside. In a separate bowl, combine the salad ingredients. Pour the creamy dressing over the broccoli mixture until coated. Easy! Healthy! Enjoy!
