This recipe is a great way to get in your daily apple and is a great salad to take to work, picnic, traveling, etc. Adding walnuts provides a nice crunch and a good source of Omega-3s.
1 chicken breast, cooked and diced
2 apples diced
5 stalks celery diced
1/4 c. walnuts
1/2 c. grapes, sliced
1/4 c. dried cranberries (optional)
4 tablespoons lemon juice
1/4 teaspoon cinnamon
Dash of nutmeg, cardamon and sea salt
Stevia to taste
Wedge of lemon
Mix ingredients together, sprinkle with stevia and cinnamon. Chill for 20 minutes. Serve with a wedge of lemon and enjoy.
