Day 9 – Last-Minute Items

There are two more days left to get ready for Christmas!! Many of us will be wrapping, prepping, planning and gathering everything we need to be ready in time. It is such a busy time, especially for women. But ready or not Christmas will be here before we know it. Everything is busy. The roads are packed and so are the stores! So if we procrastinate the last minute preparations it is obvious by these indicators we are not alone!

Here is a great cookie recipe to help Santa stay slim!
Cinnamon Walnut Cookies
1 c. walnut halves
5 dates, pitted and chopped
1 tsp. extra virgin olive oil
1 1/2 tsp. organic vanilla extract
1 tsp. cinnamon
pinch sea salt (Himalayan pink salt)
Grind dates and nuts in a food processor. Add the rest of the ingredients and pulse until the mixture becomes a ball. Remove the ball from the processer and make break apart some of the dough to form pieces into small balls. Slightly flatten the balls on a non-stick cookie sheet but not entirely flat. Bake at 350 degrees for about 6-8 minutes.
Optional: Grind extra walnuts in a grinder until very finely chopped. Sprinkle over the cookies.
I still have a few things to purchase and a road trip to complete! Staying paleo during the holidays as always 🙂
I just made chocolate peanut butter protein balls as a healthy snack or dessert alternative. I am making sweet potato brownies now with peanut butter, maple syrup & cocoa now. Little changes matter. No other sweets to be made this year.
I still have stockings to wrap; cookies to make! Ahhhhh So ready for the kids to open their gifts so I can take it all down lol. #Adulting!
