Fire Roasted Cabbage Stew
If you need to feed a large group or want to make a wonderful lunch soup for the week. Try this fire roasted cabbage stew. It is healthy delicious and has just enough kick to keep things interesting.
1 lb of lean ground beef
1/2 onion diced
Himalayan pink salt
Fresh ground pepper
1/2 cup sliced red bell pepper
2 cans of organic fire roasted tomatoes
1 can of organic tomato sauce
1 can of Rotel
1 head of cabbage sliced in pieces
Shredded carrots (optional)
Brown the ground beef, onion and any optional spices until done. Add in the Rotel, tomato sauce and the two cans of stewed fire roasted tomatoes. Stir ingredients until well mixed. Add the cabbage to the top of the pan and reduce heat to medium low. Add a lid and cook covered for 30 mins. Stir the mixture every 10 mins or as needed. The cabbage will be cooked in about 20-30 mins. Keep an eye on it as stove tops vary in cooking times.
Optional ingredients: If you do not have the fire roasted diced tomatoes you can use standard and add in chipolte peppers, jalapeno and red pepper for similar results. Shredded carrots mixed in adds a nice flavor garnish to the top.
