Apples and cinnamon go together so well so I just love how these muffins turned out!

This recipe has no flour and is loaded with healthy ingredients. Some of my other muffin recipes have almond and/or coconut flour, also great healthy choices but this one is completely flourless! ?? ?

I’ve made sure to include oat bran (for weight loss) and Cinnamon—one of the most beneficial spices on earth.

Flourless Apple Cinnamon Muffins

3 eggs
2 Tbsp. virgin coconut oil
2 Tbsp. coconut milk
1/2 tsp. liquid stevia
1/4 tsp. sea salt
1/4 tsp. vanilla
2 Tbsp. oat bran
2 Tbsp. ground flaxseed (flaxmeal)
1/4 tsp. baking powder
2 Tbsp. apple sauce (no sugar added or homemade)
1 tsp. Agave nectar
1/4 tsp. cinnamon
1/4 cup raisins (optional)
1/3 cup walnuts, chopped (optional)
1 apple, chopped

Blend wet ingredients together – eggs, coconut milk, coconut oil, salt, vanilla and stevia. Combine dry ingredients and blend into wet ingredients. Add in apples, raisins and walnuts and mix well. Place in a muffin pan lined with muffin papers. Bake at 375 for about 15 minutes.

This recipe makes about 6-8 muffins. Perfect to make on the weekend or have one for every day!
