Flourless Apple Cinnamon Muffins

Apples and cinnamon go together so well so I just love how these muffins turned out! This is just one of the many muffin recipes that I’ll be posting. I have been experimenting with muffins for a few months now and have some great recipes to share. This one has no flour and is loaded with healthy ingredients. Some of my others have almond and/or coconut flour, also great healthy choices. This recipe makes about 6 muffins. Perfect to make on the weekend and have one for every day!

Flourless Apple Cinnamon Muffins

3 eggs
2 Tbsp. virgin coconut oil
2 Tbsp. coconut milk
1/2 tsp. liquid stevia
1/4 tsp. sea salt
1/4 tsp. vanilla
2 Tbsp. oat bran
2 Tbsp. ground flaxseed (flaxmeal)
1/4 tsp. baking powder
2 Tbsp. apple sauce (no sugar added)
1 tsp. Agave nectar
1/4 tsp. cinnamon
1/4 cup raisins (optional)
1/3 cup walnuts, chopped
1 apple, chopped

Blend wet ingredients together – eggs, coconut milk, coconut oil, salt, vanilla and stevia. Combine dry ingredients and blend into wet ingredients. Add in apples, raisins and walnuts and mix well. Place in a muffin pan lined with muffin papers. Bake at 375 for about 15 minutes.

    I tried these and they tasted a little too much like eggs.  I don’t know what I did wrong.   was I suppose to chop the apple smaller?  I cut them pretty small.  I didn’t take the skin off of the apple.  They also got stuck to the muffin paper cups.

      I am not sure why they tasted like eggs, but if you are not a fan then try using only 2 eggs, or do egg whites. They are very moist and do tend to stick to the pan so I used muffin papers. They came out nicely for me that way, but not perfect. I did not remove my peelings of the apple, but you totally can. My pieces are about the size of a marble. Hope this helps. I’ve had a lot of really good feedback on these so try it again … they are YUM!
