These tasty muffins are easy to make and completely flour free! Great for a healthy quick breakfast or snack!

Flourless muffinsFlourless Cranberry Walnut Muffins
2 c. oat bran
2 tsp. baking powder
1 Tbsp. cinnamon and 1/2 tsp. nutmeg OR 1 Tbsp. Apple Pie Spice
1 tsp. Himalayan pink salt
1 c. unsweetened almond milk
1/2 c. apple sauce (no sugar added)
2 Tbsp. ground flaxseed (flaxmeal)
2 egg whites
1 tsp. organic vanilla
1/2 c. Pure maple syrup or raw honey
1/2 c. walnuts
1/2 c. raisins

In a medium size bowl, mix together oat bran, baking powder and seasonings. Set aside. In a separate bowl, blend together the remaining ingredients except nuts and raisins. Slowly blend mixture in with the dry ingredients and stir in nuts and raisins. Place mixture into a muffin pan lined with muffin papers. I filled mine to the top. Bake at 400 for about 18-20 minutes.
